Fredrik Berselius is the James Beard Award nominated chef and owner of restaurant Aska in Williamsburg, Brooklyn. In 2013, Aska earned its first Michelin star and was named one of Bon Appétit’s 10 Best New Restaurants in America. Born in Sweden, Berselius moved to New York in 2000 and cooked his way through top kitchens such as Aquavit, Per Se, Corton and Seasonal, as well as stints in London, Copenhagen and Stockholm. He set out to open his own restaurant in 2012 and named it Aska, Swedish for “ashes”. At Aska, Berselius bridges the Nordic culinary traditions of his upbringing with the immediate environs of his Brooklyn address. With an emphasis on local and foraged ingredients, he masters balancing the ambitious with the approachable, offering sophisticated dishes with a touch of whimsy. Berselius’s food is just as much a visual experience as it is a gustatory one. Channeling a stark, poetic Nordic aesthetic, each plate is a natural tableau, organized to communicate a story about its provenance. (Aska is currently relocating and will reopen in fall 2015).
